Dubbed “The Saturday Sandwich” by vegetarian cook Rasmus Zepernick, this halloumi sandwich is the perfect way to start your morning. Simply toast up your bread of choice (sourdough for Zepernick) and add on a smear of cream cheese and mashed avocado. The other toppings for this vegetarian sandwich includes halloumi, of course, fried peppers and a fried egg. Add on pea shoots optionally for a bit of flair.
This recipe comes from Zepernick’s cookbook, Halloumi, an all-encompassing guide to one of his favourite ingredients. He writes, “My girlfriend and I have started setting aside some extra time to cook whenever we’re home during the weekends. On Saturdays we often make delicious sandwiches for lunch, and this one is my personal favorite.”

Vegetarian Breakfast Sandwich
Ingredients
- 1 bell pepper
- 2 slices good-quality bread
- 1 200 g / 7 oz block halloumi
- 2 eggs
- 1/4 cup cream cheese
- 1 avocado
- Pea shoots for garnish
Instructions
- Begin by rinsing the pepper and cutting it into large chunks. Place the chunks in a preheated oven with a drizzle of oil on top and roast them until soft and nicely charred.
- Cut 2 slices of bread as thick or thin as you’d like. I prefer to use sourdough bread for this recipe, but feel free to use any other type of loaf.
- In a heated pan, add butter or oil and toast the bread to your liking.
- Cut the halloumi into 6 slices. Fry the slices in another pan until golden brown and crispy.
- Once the bread has turned crispy, move it onto a plate and use the same pan to fry the 2 eggs.
- Now it’s time to assemble your sandwiches. Start by spreading a generous amount of cream cheese onto each piece of bread. Peel, cut, and mash the avocado and place it on top of the cheese, then add the fried peppers, halloumi, and finally the fried egg. Garnish with pea shoots and enjoy!
