Hannah Sunderani's Vegan Grilled Cheese

Hannah Sunderani's recipe for a quick grilled cheese sandwich made with vegan mozzarella on sourdough.

Ingredients
  

  • 4 tsp vegan butter or coconut oil
  • 2 slices sourdough bread
  • tsp sea salt divided
  • ¼ cup vegan mozzarella
  • pinch pepper

Instructions
 

  • Spread butter over each side of bread slices; sprinkle with one pinch salt.
  • In large skillet, cook bread over medium heat, flipping until golden. Spread mozzarella over one slice; sprinkle with pepper and remaining salt, then top with remaining bread.
  • Cook sandwich, flipping occasionally, until cheese is hot.
