Cantaloupe, Feta and Fig Salad
A refreshing summer salad with cantaloupe, figs, feta cheese and a simple vinaigrette.
- 2 tbsp extra virgin olive oil
- 2 tbsp oregano leaves finely chopped
- 1 tbsp freshly squeezed lemon juice
- 1 tsp salt flakes
- 1 small cantaloupe peeled and cut into thin wedges
- 4 figs halved or quartered
- 5½ oz (150 g) Greek feta finely sliced
In a small bowl, whisk together the olive oil, oregano leaves, lemon juice and salt flakes.
Arrange the cantaloupe wedges and figs on a serving platter and top with the feta. Drizzle with the dressing and serve.
