A dish with canteloupe, fig and feta cheese salad

Cantaloupe, Feta and Fig Salad

A refreshing summer salad with cantaloupe, figs, feta cheese and a simple vinaigrette.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 tbsp oregano leaves finely chopped
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp salt flakes
  • 1 small cantaloupe peeled and cut into thin wedges
  • 4 figs halved or quartered
  • oz (150 g) Greek feta finely sliced

Instructions
 

  • In a small bowl, whisk together the olive oil, oregano leaves, lemon juice and salt flakes.
  • Arrange the cantaloupe wedges and figs on a serving platter and top with the feta. Drizzle with the dressing and serve.
