Fried Egg and Halloumi Breakfast Sandwich

This savoury vegetarian breakfast sandwich layers crispy, golden halloumi with a perfectly fried egg, avocado and fried bell pepper spears. It’s a simple yet elevated morning meal that delivers big flavour and satisfying texture in every bite.
- 1 bell pepper
- 2 slices sourdough bread
- 1 200 g / 7 oz block halloumi
- 2 eggs
- 1/4 cup cream cheese
- 1 avocado
- Pea shoots for garnish
Begin by rinsing the pepper and cutting it into large chunks. Place the chunks in a preheated oven with a drizzle of oil on top and roast them until soft and nicely charred.
Cut 2 slices of bread as thick or thin as you’d like. I prefer to use sourdough bread for this recipe, but feel free to use any other type of loaf.
In a heated pan, add butter or oil and toast the bread to your liking.
Cut the halloumi into 6 slices. Fry the slices in another pan until golden brown and crispy.
Once the bread has turned crispy, move it onto a plate and use the same pan to fry the 2 eggs.
Now it’s time to assemble your sandwiches. Start by spreading a generous amount of cream cheese onto each piece of bread. Peel, cut, and mash the avocado and place it on top of the cheese, then add the fried peppers, halloumi, and finally the fried egg. Garnish with pea shoots and enjoy!
