Inspired by the ingredients of a Niçoise salad, this creation features a mix of flaky tuna, capers, green beans, lemon and Dijon along with layers of olive tapenade, hard-boiled eggs, tomato slices and potato chips. Press it muffuletta-style for a flavour-packed bite ideal for picnics.
In bowl, combine tuna, green beans, red onion, capers, mayonnaise, lemon juice and Dijon mustard. Season with salt and pepper to taste, then gently stir until everything is well mixed.
Spread tuna mixture evenly on bottom half of baguette. Layer with sliced hard-boiled eggs, tomato slices, arugula and potato chips.
Spread olive tapenade in even layer on inside of top half of baguette. Press top half firmly onto sandwich to hold everything together. Squeeze sandwich gently to compact it, then slice into 4 to 6 portions
Notes
Tip: Feel free to swap out the green beans for another crunchy veggie, such as cucumber, if you prefer.
