Tuna nicoise on baguette, tied with butcher's twine

Niçoise Salad Sandwich

This isn’t just any tuna sandwich—it’s a French getaway in a baguette. Inspired by the ingredients of a Niçoise salad, this creation features a mix of flaky tuna, capers, green beans, lemon and Dijon along with layers of olive tapenade, hard-boiled eggs, tomato slices and potato chips. Press it muffuletta-style for a flavour-packed bite ideal for sunny picnics.

Ingredients

  • 2 cans albacore tuna drained
  • ¼ cup chopped raw green beans
  • 3 tbsp finely diced red onion
  • 3 tbsp capers
  • ¼ cup mayonnaise
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • salt and freshly ground black pepper
  • 1 baguette sliced in half lengthwise
  • 4 hard-boiled eggs sliced lengthwise
  • 1 tomato thinly sliced
  • –2 cups arugula
  • 1 cup potato chips preferably kettle chips
  • 4 –6 tbsp black olive tapenade

Instructions
 

  • In bowl, combine tuna, green beans, red onion, capers, mayonnaise, lemon juice and Dijon mustard. Season with salt and pepper to taste, then gently stir until everything is well mixed.
  • Spread tuna mixture evenly on bottom half of baguette. Layer with sliced hard-boiled eggs, tomato slices, arugula and potato chips.
  • Spread olive tapenade in even layer on inside of top half of baguette. Press top half firmly onto sandwich to hold everything together. Squeeze sandwich gently to compact it, then slice into 4 to 6 portions

Notes

Tip: Feel free to swap out the green beans for another crunchy veggie, such as cucumber, if you prefer.
