Roasted Feta With Mulled Spiced Grapes
Chef Sous Chef
The magic of this dish lies in the warming of the spices – cinnamon, orange peel, clove and star anise – which will fill your home with a cozy aroma. Serve this dish as an app or as a rich addition to a cheese board.
- 400 g feta cheese (see note #1) drained
- 400 g Concord or red grapes
- 4 whole cloves
- 3 whole star anise
- 2 cinnamon sticks
- 2-3 strips orange peel
- 2 tbsp olive oil
- pinch salt
Preheat oven to 425°F.
Place feta in centre of baking dish and arrange grapes around it. Tuck cloves, star anise, cinnamon sticks and orange peel among grapes. Drizzle with olive oil and lightly sprinkle grapes with salt.
Roast until cheese is soft and lightly browned on top and grapes are lightly charred, 25 minutes.
Use a spatula to transfer feta to serving plate and arrange grapes around it. Spoon juices from pan over grapes, and lightly season everything with salt. Enjoy warm with crackers or crostini.
Different feta will result in different textures: Sheep feta will be creamier, while goat or cow feta will be a bit more firm.
For extra sweetness and acidity, drizzle honey or balsamic glaze over the roasted feta and grapes right before serving.
