A strawberry goat cheese pizza hot right out of the oven.

Strawberry Goat Cheese Pizza

Strawberries are ideal as a pizza topping, where they pair wonderfully with salty cheeses like goat or Feta.

Ingredients

White Balsamic Vinaigrette

  • 3 tsp white balsamic vinegar
  • 3 tsp extra virgin olive oil

Aged Balsamic Reduction

  • ¼ cup aged balsamic vinegar

Pizza

  • 1 pkg store-bought pizza dough at room temperature
  • ½ cup crumbled goat cheese
  • 3 cups fresh California strawberries hulled and quartered
  • ½ cup mozzarella shredded
  • Olive oil
  • Coarsely ground black pepper
  • Fresh basil chiffonade into strips

Instructions
 

White Balsamic Vinaigrette:

  • In small non-reactive saucepan, simmer white balsamic vinegar until reduced to 1½ tbsp. Whisk in extra virgin olive oil.

Aged Balsamic Reduction:

  • In small non-reactive saucepan, simmer aged balsamic vinegar until reduced to 4 tsp (approx).

Pizza:

  • Place oven rack in middle position. Pre-heat oven to 475°F.
  • Toss strawberries with White Balsamic Vinaigrette.
  • Roll out pizza dough into a 12- to 14-in round on a generously floured surface. Top with mozzarella, goat cheese and strawberries
  • Place pizza on greased baking sheet. Cook in centre of oven until dough is evenly browned on bottom and mozzarella cheese has melted, about 15 minutes.
  • Drizzle Aged Balsamic Reduction on top of both pizzas; sprinkle with black pepper. Garnish pizzas with basil and serve.
