Strawberry Goat Cheese Pizza
Strawberries are ideal as a pizza topping, where they pair wonderfully with salty cheeses like goat or Feta.
White Balsamic Vinaigrette
- 3 tsp white balsamic vinegar
- 3 tsp extra virgin olive oil
Aged Balsamic Reduction
- ¼ cup aged balsamic vinegar
Pizza
- 1 pkg store-bought pizza dough at room temperature
- ½ cup crumbled goat cheese
- 3 cups fresh California strawberries hulled and quartered
- ½ cup mozzarella shredded
- Olive oil
- Coarsely ground black pepper
- Fresh basil chiffonade into strips
White Balsamic Vinaigrette:
Pizza:
Place oven rack in middle position. Pre-heat oven to 475°F.
Toss strawberries with White Balsamic Vinaigrette.
Roll out pizza dough into a 12- to 14-in round on a generously floured surface. Top with mozzarella, goat cheese and strawberries
Place pizza on greased baking sheet. Cook in centre of oven until dough is evenly browned on bottom and mozzarella cheese has melted, about 15 minutes.
Drizzle Aged Balsamic Reduction on top of both pizzas; sprinkle with black pepper. Garnish pizzas with basil and serve.
