There’s truly nothing more impressive than a chef who can flip ingredients in a frying pan over a hot stove – the more dramatic the flip, the better. But have you ever tried to single-handedly flip a pancake in a pan? Only to find the pancake on the floor seconds later? That would be me. I’ve tried various techniques, including one that I’d been told was a sure thing: tipping the pancake so it slides right to the edge of the pan, counting to three, and then flipping it.
