10 questions with Canadian winemaker Chuan Qin

Qin talks about the semi-sweet Riesling he made in celebration of the Lunar New Year.

At Featherstone Estate Winery in Niagara, Ont. assistant winemaker Chuan (Kevin) Qin has made his first vintage – a 2023 semi-sweet Riesling called Jade. This single vineyard Featherstone Riesling boasts the subtle sweetness of orchard ripe peaches and pears, with a hint of lime.

Jade was released in time to celebrate the Lunar New Year, and we asked Qin to share with us why he loves making wine, and what makes his first Riesling special.

How did your career in winemaking begin?

My journey into winemaking started with a deep passion for terroir and the art of fermentation. I initially studied agricultural or food sciences and later delved into viticulture and enology, which eventually led me to work in a winery. From the vineyard to the cellar, every step of the process fascinated me, driving me to continuously explore and innovate.

What interests you the most about wine?

What fascinates me most about wine is that it is a living art form – each bottle carries the essence of time, terroir, and craftsmanship. I love how wine reflects different vintages, soils, and climates and how winemaking techniques allow these natural elements to be expressed in unique and captivating ways.

What are your winemaking philosophies and aspirations?

My winemaking philosophy is to respect nature and bring out the true essence of the grapes. I believe that great wine starts with great fruit, so I focus on sustainable viticulture, minimal intervention, and natural fermentation to let the wine develop its own character. My goal is to create wines that not only express the terroir but also connect emotionally with those who drink them, becoming a part of their cherished moments.

How would you describe your winemaking style?

I would describe my style as balanced, elegant, and complex. I strive to craft wines with depth and structure, allowing them to be vibrant in their youth while developing greater complexity and refinement with time.

Do you celebrate the Lunar New Year?

Yes, the Lunar New Year is an important holiday for me. No matter where I am, I always take the time to celebrate with family and friends, sharing delicious food and wine while embracing the warmth of togetherness.

How do you celebrate? Do you have any traditions?

Typically, I celebrate with a family reunion dinner featuring symbolic dishes like fish (for abundance), dumplings (for prosperity), and rice cakes (for progress and success). We also toast to good fortune and share our best wishes. If possible, I enjoy watching traditional dragon and lion dances to soak in the festive atmosphere.

What inspired you to create a vintage that was timed to be released on the Lunar New Year?

The Lunar New Year represents a fresh start and good fortune, and I wanted to craft a special wine to commemorate this occasion. Jade is not only a celebration of the holiday but also a fusion of tradition and modernity. My hope is that it becomes a part of people’s festive gatherings, enhancing the joy of reunion and shared moments.

What are you trying to achieve with this wine? And where did the name Jade come from?Bottle of Canadian Riesling Jade

I want Jade to embody elegance, purity, and lasting beauty – just like the gemstone it is named after. In Chinese culture, jade symbolizes luck, harmony, and nobility, which aligns perfectly with the artistry and precious nature of wine. This name reflects my hope that Jade will bring good fortune and happiness to those who enjoy it.

Any recommendations on what to serve a semi-sweet Riesling with?

Jade pairs wonderfully with traditional Lunar New Year dishes, such as:

  • Braised pork belly or Dongpo pork – The wine’s silky texture and refined tannins complement the dish’s richness.
  • Steamed fish – Enhancing the wine’s fruit-forward character while complementing the fish’s delicate flavours.
  • Roast duck or char siu (barbecued pork) – The wine’s acidity balances the dish’s savoury-sweet elements beautifully.
  • Dumplings – Whether filled with meat or vegetables, they highlight the wine’s versatility.

It’s also a fantastic wine to enjoy on its own, perfect for toasting to the New Year.

What are you doing this Lunar New Year’s Eve?

This year, I plan to celebrate with family and friends, gathering around the table to enjoy delicious food and wine while reminiscing about the year and sharing hopes for the future. As the clock strikes midnight, we will raise our glasses to welcome the new year and all the good things.
