Spicy Grilled Pineapple
Fresh pineapple becomes even sweeter and juicier when it's grilled and the natural sugars caramelize. Marinating pineapple rings in a chili spice mix before grilling creates complex sweet and sour flavours.

Ingredients
- 1 pineapple Peeled and halve into 6 ½-inch thick slices or rings
- 1 red chili pepper seeded and chopped
- 5 tsp packed cane sugar or brown sugar
- 1 tsp paprika
- 2 tsp olive oil
Instructions
- Pre-heat barbecue or grill pan to medium.
- Place chili pepper, 5 tsp of the sugar and 1 tsp of the paprika in mortar and pestle; grind together until fine.
- Brush spice and chili pepper mix over pineapple slices, pressing the mix gently into the fruit. Let marinate for 15 minutes.
- Spray or brush the grill with vegetable oil. Cook pineapple rings until caramelized, about 2-3 minutes per side. Serve immediately.
