Frozen Yogurt Bark

Use fresh or frozen berries in this easy make-ahead dessert.

“This is a great pick-me-up recipe, whether it’s enjoyed as a snack or a dessert,” write certified nutritionists Tamara Green and Sarah Grossman in their new book Good Food, Good Mood: 100 Nourishing Recipes to Support Mind and Body Wellness. This recipe, for an easy frozen yogurt bark, tastes like an indulgent dessert but actually packs a nutritious punch: “The protein-rich yogurt and polyphenol-rich fruits help your body make feel-good neurotransmitters to uplift you, and the magnesium-rich chocolate helps you feel calm,” Green and Grossman write. “Simply spread yogurt out on a baking sheet and go nuts with the toppings you love.”

Course Dessert, Snack
Servings 6

Ingredients

  • 2 cups plain Greek yogurt or dairy-free yogurt
  • 1 tsp pure vanilla extract
  • 3 tbsp maple syrup or honey
  • ½ cup toasted almonds roughly chopped
  • cups mixed berries blueberries, raspberries, blackberries, fresh or frozen
  • ½ cup roughly chopped dark chocolate or dark chocolate chips
  • ¼ cup thick coconut chips
  • drizzle of honey optional

Instructions

  • In a medium bowl, combine the yogurt, vanilla and maple syrup, mixing well.
  • Line a large baking sheet with parchment paper and evenly spread the yogurt mixture on it, making it as thin as you can. Cascade the almonds, berries, chocolate and coconut chips overtop, then gently press them in to ensure they stick. Drizzle honey overtop if you’d like to add extra sweetness.
  • Place in the freezer for 3 to 4 hours. Once completely frozen, break into jagged pieces. Store in an airtight container in the freezer for up to 1 month.
