Mango and Tamarind Dark ‘N’ Stormy

Chef Devan Rajkumar's invigorating take on a classic Caribbean cocktail.

Mango and tamarind make a popular pairing, and in his book Mad Love: Big Flavors Made to Share, from South Asia to the West Indies, Canadian chef and TV personality Devan Rajkumar introduces the combo to a classic cocktail. “A Dark ’n’ Stormy is a delicious cocktail made with ginger beer and dark rum (essentially, it’s a Moscow Mule with rum instead of vodka),” he explains. “Skip the rum for an equally quenching mocktail.”

Mango and Tamarind Dark 'N' Stormy

Chef Devan Rajkumar's recipe for a Dark 'n' Stormy cocktail with fresh mango pulp and tamarind purée.

Ingredients
  

  • ½ oz simple syrup see note
  • 1 tsp tamarind purée
  • 1 oz mango pulp
  • 1 oz fresh lime juice
  • 2 oz dark rum optional
  • 4 oz ginger beer
  • lime wedge for garnish

Instructions
 

  • In a tall glass, combine simple syrup, tamarind purée, mango pulp and lime juice and stir well. Add ice, rum (if using) and ginger beer. Garnish with a lime wedge and serve.

Notes

To make simple syrup, combine sugar and ¾ cup water in a small saucepan over medium heat. Heat for 1 to 2 minutes, until sugar has completely dissolved. Pour into a container and set aside to cool.
