Brazilian Canary Port Cocktail

This fresh, tangy Sour is based on dry white port.

In anticipation of the upcoming Olympic soccer matches at the 2024 Paris Games, we’re paying tribute to different contenders by mixing up cocktail recipes inspired by their teams and countries. In this case, The Canary – a citrusy port cocktail with mint – makes the perfect tipple for fans cheering on Brazil. Writer James Chatto explains:

“‘The Canaries,’ or ‘As Canarinhas‘ in Portuguese, is the nickname of Brazil’s soccer team, whose shirts are canary yellow. The Canary cocktail is based on dry white port, a style pioneered by Taylor Fladgate in 1934 and now produced by many leading port houses. It’s relatively fresh and tangy for a port but still has some sweetness – characteristics that are amplified by the lemon and honey in this recipe. The cocktail must be shaken twice – once without ice (“dry shaking”) to better mix the egg white and honey and then again with ice to chill it all down. The mint leaves are a surprisingly meaningful component.”

Brazilian Canary Port Cocktail

This fresh, tangy and just-sweet-enough cocktail is made with dry white port and lemon juice.

Ingredients
  

  • oz dry white port
  • 1 oz freshly squeezed lemon juice
  • 1 tsp liquid honey
  • 1 egg white medium egg
  • 5 mint leaves
  • ice
  • 1 sprig lavender for garnish

Instructions
 

  • In cocktail shaker, add port, lemon juice, honey, egg white and mint leaves. Dry shake vigorously for at least 10 seconds (or longer).
  • Top with ice; shake for 15 seconds. Double-strain into coupe glass and garnish foamy top with lavender.
