Strawberry Goat Cheese Pizza

Ingredients
White Balsamic Vinaigrette
- 3 tsp white balsamic vinegar
- 3 tsp extra virgin olive oil
Aged Balsamic Reduction
- ¼ cup aged balsamic vinegar
Pizza
- 1 pkg store-bought pizza dough at room temperature
- ½ cup crumbled goat cheese
- 3 cups fresh California strawberries hulled and quartered
- ½ cup mozzarella shredded
- Olive oil
- Coarsely ground black pepper
- Fresh basil chiffonade into strips
Instructions
White Balsamic Vinaigrette:
- In small non-reactive saucepan, simmer white balsamic vinegar until reduced to 1½ tbsp. Whisk in extra virgin olive oil.
Aged Balsamic Reduction:
- In small non-reactive saucepan, simmer aged balsamic vinegar until reduced to 4 tsp (approx).
Pizza:
- Place oven rack in middle position. Pre-heat oven to 475°F.
- Toss strawberries with White Balsamic Vinaigrette.
- Roll out pizza dough into a 12- to 14-in round on a generously floured surface. Top with mozzarella, goat cheese and strawberries
- Place pizza on greased baking sheet. Cook in centre of oven until dough is evenly browned on bottom and mozzarella cheese has melted, about 15 minutes.
- Drizzle Aged Balsamic Reduction on top of both pizzas; sprinkle with black pepper. Garnish pizzas with basil and serve.
