Fried shallots add crunch and flavour to an endless variety of dishes. Keep the flavourful oil for use in salads and stir-fries.
An easy recipe for an addictive garnish: crispy fried shallots.
- 350 g (8-9) shallots thinly sliced
- 1½ cups peanut oil
- pinch salt
- Set a fine-mesh sieve over a medium heatproof bowl. Add shallots to a pot; pour in peanut oil.
- Fry over medium-high heat for 10 minutes, stirring from time to time. Reduce to medium-low; continue to cook for another 10 to 12 minutes, stirring frequently, until golden.
- Strain through sieve, then transfer to paper-towel-lined plate. Sprinkle with pinch of salt and let cool. Shallots will crisp while standing.
