Crispy Fried Shallots

You'll want to sprinkle these on everything.

Fried shallots add crunch and flavour to an endless variety of dishes. Keep the flavourful leftover oil for use in salads and stir-fries.

Crispy Fried Shallots

An easy recipe for an addictive garnish: crispy fried shallots.
Course garnish
Servings 2 cups

Ingredients
  

  • 350 g (8-9) shallots thinly sliced
  • cups peanut oil
  • pinch salt

Instructions
 

  • Set a fine-mesh sieve over a medium heatproof bowl. Add shallots to a pot; pour in peanut oil.
  • Fry over medium-high heat for 10 minutes, stirring from time to time. Reduce to medium-low; continue to cook for another 10 to 12 minutes, stirring frequently, until golden.
  • Strain through sieve, then transfer to paper-towel-lined plate. Sprinkle with pinch of salt and let cool. Shallots will crisp while standing.
