Maple Glazed Tandoori Salmon

This easy maple-glazed salmon recipe uses tandoori spice to add the warm, aromatic flavours of cumin, coriander, garam masala and turmeric, the perfect complement to maple syrup.

Ingredients
  

Salmon

  • 1 pound skinless, boneless, salmon filets about 4
  • 2 tbsp olive oil plus extra for cooking
  • 2 tbsp Tandoori Marinade Spice Blend
  • ½ tsp sea salt
  • 2 tbsp pure maple syrup

Tandoori Marinade Spice Blend

  • 2 tbsp sweet paprika
  • tsp coriander powder
  • 1 tbsp garam masla
  • 1 tbsp Kashmiri chili powder
  • 2 tsp Indian chili powder
  • 2 tsp cumin powder
  • 1 tsp amchoor

Instructions
 

Salmon

  • In a medium bowl, place the salmon filets. In a small bowl, combine the oil, tandoori marinade spice blend, and salt and mix well.
  • Add the marinade to the salmon, coating well on all sides. Cover the bowl and marinate in the refrigerator for at least 1 hour.
  • Heat a large non-stick, heavy-bottomed skillet on medium-high heat and add 1 tablespoon oil. Arrange the salmon filets in the skillet and cook on one side for 5 minutes. Using a pastry brush, glaze the salmon with maple syrup. Flip and cook for another 5 minutes or until the salmon reaches your desired doneness, and glaze the top with maple syrup.

Tandoori Marinade Spice Blend

  • In a large mortar and pestle or medium bowl, place all the ingredients and mix until the spice blend is uniform.
  • Store the tandoori marinade spice blend in a stainless-steel container or an airtight jar for up to 12 months, keeping it in a cool, dark place.
