
Pomegranate Sour
Pomegranate is the star of this drink. Its natural tartness brings forth lots of glorious fruity tannins, and touches of cinnamon and vanilla echo a classic rum tasting note. The garnish for this drink is a maraschino cherry, but feel free to use a nice chunk of fresh pomegranate instead if it’s in season. It’ll look quite juicy, decadent and celebratory.

Ingredients
Cinnamon Vanilla Syrup
- 1 cup water
- ½ granulated sugar
- 5 cinnamon sticks
- ½ vanilla bean split in half
Mocktail
- ½ cup pomegranate juice
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp orgeat syrup
- ½ tbsp Cinnamon Vanilla Syrup
- ½ tsp aromatic or orange bitters
- ¼ tsp cocktail foamer
- Ice
- 1 maraschino cherry for garnish
Instructions
Cinnamon Vanilla Syrup:
- Place water, sugar, cinnamon and vanilla bean in small saucepan over medium heat. Bring to a boil, then reduce heat to low and simmer until reduced by half.
- Let cool, then transfer to clean glass or jar to store (no need to strain). Syrup will keep in fridge for about 1 week.
Mocktail:
- Add pomegranate juice, lemon juice, orgeat syrup, Cinnamon Vanilla Syrup, bitters and cocktail foamer to cocktail shaker and dry shake for about 30 seconds. Add ice and shake again for 1 or 2 minutes, until shaker turns frosty.
- Strain into chilled glass and garnish with maraschino cherry.
Notes
Tip: Most bitters have an alcohol base but are typically used in such small quantities when mixed into a drink that their alcohol content is negligible. If you want a truly zero-proof cocktail, look for non-alcoholic bitters online or at bartender supply stores.
