“AAA beef tenderloin roast.” That’s what I found in the meat aisle when I was looking for inspiration for the Easter lunch I was hosting, and it brought on a whirlwind of memories. Throughout my childhood, holiday meals were enjoyed with our entire extended family, and when it was my late mother’s turn to host, a premium beef tenderloin was usually the star. She also loved experimenting with new recipes, and I know she’d have wanted to try making this Beef Tenderloin With Peanut-Sesame Crust, which I opted for this year. Beef Tenderloin With Peanut-Sesame Crust
An easy and memorable recipe for roasted beef tenderloin with a crunchy peanut-sesame crust.
Ingredients
- 1 bunch cilantro chopped
- 4 cloves garlic chopped
- 1 green onion chopped
- 1 1-in (3 cm) piece ginger peeled and chopped
- 1 carrot peeled and chopped
- ¾ cup roasted peanuts crushed
- ½ cup sesame seeds
- ⅓ cup honey
- 3 tbsp soy sauce
- 800 g beef tenderloin
Instructions
- Preheat oven to 450°F.
- In small food processor, pulse together cilantro, garlic, green onion, ginger and carrot until a paste forms. Add peanuts and sesame seeds and pulse to combine; scrape onto large plate.
- In small bowl, mix together honey and wsoy sauce. Brush over beef. Roll beef in peanut mixture to evenly coat. Transfer to foil-lined baking sheet.
- Roast until medium-rare, 20 to 25 minutes (or longer, depending on preference), when instant-read thermometer inserted in centre reads 130°F.
- Remove to cutting board or rack; cover with foil and let rest 5 to 10 minutes.
