The aromatic Bartlett pear is the perfect choice for this rosemary-infused spritz, but feel free to substitute with any variety of pear that’s conveniently available. Freeze extra Pear Rosemary Syrup in ice cube trays; one frozen cube has enough syrup for one cocktail. Thaw ahead of serving, or add to spritz as is. To create an alcoholic Pear Spritz, add a splash of white wine or rum, or some fizzy Prosecco.
Pear Spritz Mocktail
This vibrant mocktail features a rosemary infusion and the sweet taste of pears.
Ingredients
Pear Rosemary Syrup
- ¾ cup granulated sugar
- ¾ cup water
- 1 Bartlett pear chopped (or pear of choice)
- 1 sprig rosemary
Mocktail
- thinly sliced pears
- ice
- 1½ oz Pear Rosemary Syrup
- ⅔ cup club soda approx
- 1 sprig rosemary
Instructions
Pear Rosemary Syrup
- In saucepan, bring sugar, water, pear and rosemary to a boil over medium heat, and continue boiling until sugar is dissolved. Reduce heat and simmer until pears are very tender and falling apart, 15 to 18 minutes.
- Using an immersion blender or blender, whirl until smooth. Strain through a fine-mesh sieve into a bowl. Let cool. The Pear Rosemary Syrup makes ¾ cup. Store in the refrigerator for up to 1 week.
Mocktail
- Arrange sliced pears inside a tall glass or wine glass; fill with ice. Top with pear syrup, club soda and rosemary; gently stir to combine.
