3-Ingredient Almond Meringue Cookies

Light and elegant, these almond meringue cookies are made by folding finely ground almonds into glossy whipped egg whites, creating a delicate cookie with crisp edges and a soft centre.

Ingredients

  • 3 large egg whites
  • ¾ cup granulated sugar
  • 1 cup finely ground almonds

Instructions
 

  • Preheat oven to 300°F (150°C). Line a baking sheet with parchment.
  • Whip egg whites to soft peaks, gradually adding sugar until glossy.
  • Gently fold in ground almonds.
  • Spoon or pipe onto baking sheet.
  • Bake for 35–40 minutes until dry to the touch.

Notes

Tips:
  • Use superfine sugar for the smoothest meringue.
  • Store in a dry container to maintain crispness.
