This chopped rainbow salad is a quick and colourful dish packed with fresh vegetables, chickpeas, avocado and pomegranate seeds tossed together in a bright lime dressing.

Ingredients

  • 3 oz pomegranate seeds
  • 3 oz chickpeas
  • 3 oz yellow bell peppers
  • 3 oz ripe tomatoes
  • 3 oz red onion
  • 3 oz cucumber
  • 3 oz radishes
  • 3 oz ripe avocado
  • 3 oz little gem lettuce
  • 1 oz dried mango
  • ½ bunch fresh mint
  • 1 lime
  • 1 tbsp extra-virgin olive oil
  • salt and freshly cracked black pepper

Instructions
 

  • In a large bowl, add pomegranate seeds and chickpeas.
  • Trim, peel or seed, and finely chop all of the vegetables and fruit, including the dried mango and mint leaves. Add to bowl.
  • Drizzle with lime juice and olive oil. Toss gently. Season with salt and pepper to taste.
