Chocolate-Covered Strawberries

Glossy dark chocolate and ripe strawberries make this two-ingredient treat almost absurdly easy.

There’s something undeniably luxurious about a strawberry dipped in dark chocolate: the crisp shell giving way to sweet, juicy fruit. They’re the kind of treat we tend to order by the box from a chocolatier, yet they take very little effort to make at home.

The trick is starting with good strawberries and getting them completely dry. From there, it’s simply a matter of melting the chocolate, dipping the berries and waiting – perhaps the hardest part – for the chocolate to set.

Chocolate-Covered Strawberries

Fresh strawberries and rich dark chocolate come together in an elegant two-ingredient dessert that’s surprisingly easy to make.

Ingredients

  • 1 lb 454 g fresh strawberries (about 12 – 16 strawberries)
  • 200 g 7 oz good-quality semisweet or dark chocolate, chopped

Instructions
 

  • Wash the strawberries and pat them thoroughly dry. Leave them to air-dry until no moisture remains, particularly around the leaves.
  • Line a baking sheet or large plate with parchment paper.
  • Put the chocolate in a microwave-safe bowl and heat in 20-second intervals, stirring well each time. When just a few pieces remain, stop heating and stir until completely smooth.
  • Hold each strawberry by its leaves and dip it into the chocolate. Let the excess fall back into the bowl, then place on the parchment. Continue with the remaining berries.
  • Leave at room temperature until the chocolate has set.

Water and melted chocolate don’t mix.
Take the extra few minutes to make sure the berries are completely dry before you start dipping.
Let residual heat do the work.
Chocolate scorches easily, so stop microwaving before it looks completely melted and stir until smooth.
Add a finish.
Chopped pistachios, hazelnuts, toasted coconut or a fine drizzle of white chocolate can be added before the chocolate sets.
No microwave?
Melt the chocolate in double-boiler or a heatproof bowl set over barely simmering water, making sure the bowl doesn’t touch the water.

What chocolate is best for dipping strawberries?
Dark or semisweet chocolate both work beautifully. More important than the percentage is using chocolate you genuinely like—the ingredient list is short enough that you’ll taste the difference.
Why won’t the chocolate stick to my strawberries?
Moisture is usually the culprit. The berries need to be completely dry before they’re dipped.
Should strawberries be cold before dipping?
They don’t need to be. Room-temperature berries are fine; getting them thoroughly dry matters more.
How should you store chocolate-covered strawberries?
They’re at their best the day they’re made. If you need to keep them longer, refrigerate them and bring them out shortly before serving.
Can you make chocolate-covered strawberries ahead of time?
Yes, but they’re best made only a few hours before you plan to eat them. As they sit, strawberries naturally release moisture, which can affect the chocolate coating.
