This chicken and ramen noodle soup recipe from Deb Perelman was inspired by the flavours of NYC’s Chinatown. “[The soup] works on a night that we’re thinking about getting Chinese food delivered, and we want something that’s a little more homemade.” Deb says. “It’s really just a very simple weeknight way to make chicken noodle soup, and I love that it has a little bit of those wonton soup flavours in it.”

This impressive-looking apple tart can be thrown together in less than an hour (as long as you have some puff pastry already thawed) and is the perfect dessert for serving last-minute dinner guests. Pavé is French for “cobblestone” and chef for flat, rectangular food that’s often composed of many layers,” explains Chef Michael Smith about this recipe. “The elaborate method wonderfully highlights the distinctive flavours of earthy root vegetables.” There’s no cream or cheese in this recipe, which makes it a lighter, and healthier, version of an ombre gratin.

Kim Kushner’s recipe calls for spreading the whipped ricotta on grilled sourdough bread and then drizzled with truffle honey.

One-Pot Chicken With Rice, Chorizo and Tomatoes

Spicy chorizo is in this version of a one-pot chicken and rice, but the recipe is versatile and easy to adjust, says Perelman. “You could add more vegetables for sure. You can always add greens to it,” she says. “Actually, it wouldn’t be terrible with a garlicky aioli. A little dab at the end if you’re looking for a little ‘zhuzh,’ put a little swish of that on the plate and then you spoon it on top.” And don’t forget the paella-style socarrat (rice crust) from the bottom of the pan – the layer of crispiness is divine.
