Peanut Punch

Cool down with this popular Caribbean bevvy.

Peanut punch varies in preparation styles, but the Caribbean refreshment is almost always made with a mix of peanuts or peanut butter, milk (or plant milk), sweetener and seasonings like nutmeg and vanilla. High in protein and best served ice-cold, it’s a staple for many, which is why brands like Grace sell it ready-made. In his book Mad Love: Big Flavors Made to Share, from South Asia to the West Indies, Canadian chef and TV personality Devan Rajkumar shares his recipe for making it from scratch: ‘Chef Dev’ adds in a banana for extra thickness and sweetens with maple syrup. If you’re feeling adventurous, try it with a splash of rum.

Peanut Punch

Ingredients
  

  • ¾ cup peanuts
  • 3 tbsp peanut butter
  • 1 cup coconut milk
  • ¾ cup ice
  • 1 banana
  • tbsp maple syrup
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cardamom
  • tsp ground ginger
  • toasted peanuts chopped, for garnish

Instructions
 

  • Combine all ingredients in a blender and blend for 2 minutes, until smooth.
  • Serve in chilled glasses. Garnish with peanuts.
