Prophecy’s Wabi Sabi Martini

Jeff Savage, the beverage director at Vancouver’s Prophecy, created this martini in homage to Japanese poet and tea master Sen no Rikyū. This is one best tried IRL at the bar: Savage uses a rotary evaporator to combine ceremonial-grade matcha with Tanqueray No. Ten Gin, resulting in a clear, silky and very flavourful drink.

Ingredients

  • 2 oz matcha redistilled gin
  • ½ oz Cocchi Americano
  • 1 dash The Japanese Bitters – Hinoki
  • 1 dash saline tincture 5:1 water to salt
  • Ice
  • Lime zest for garnish

Instructions
 

  • In mixing glass, combine gin, Cocchi Americano, bitters and saline tincture. Add ice and stir until chilled and diluted.
  • Strain into martini glass and garnish with lime zest.
