Peanut Punch

Cool down with this popular Caribbean bevvy.

Peanut punch is a popular Caribbean drink typically made with peanuts or peanut butter, milk, sweetener and spices, then blended until creamy and served ice-cold. In his cookbook Mad Love, from South Asia to the West Indies, Devan Rajkumar puts his own spin on the classic, using both peanuts and peanut butter, swapping in coconut milk and adding banana for extra creaminess. Maple syrup provides the sweetness, while cinnamon, nutmeg, cardamom and ginger add flavour. For a grown-up version, add a splash of rum.

Peanut Punch

A creamy, chilled Caribbean peanut punch with peanuts, coconut milk, banana, maple syrup and fragrant spices.

Ingredients

  • ¾ cup peanuts
  • 3 tbsp peanut butter
  • 1 cup coconut milk
  • ¾ cup ice
  • 1 banana
  • tbsp maple syrup
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cardamom
  • tsp ground ginger
  • toasted peanuts chopped, for garnish

Instructions
 

  • Combine all ingredients in a blender and blend for 2 minutes, until smooth.
  • Serve in chilled glasses. Garnish with peanuts.
