The team at Toronto’s Simpl Things want each of their cocktails to evoke a sense of intrigue and comfort. Their earthy version of the paloma the Plum & Circumstance is made with a house-infused smoked tequila. It’s meant to conjure the feeling of enjoying a quiet moment of lounging on a hammock by the shore.

Simpl Things' Plum & Circumstance

Made with a house-infused smoked tequila, this earthy version of a paloma conjures quiet moments lounging on a hammock by the shore.

Ingredients

  • ice
  • oz umeshu
  • 1 oz Smoked Plum & Hawthorne Tequila
  • 0.4 oz prepared rich simple syrup
  • acidified grapefruit juice (3.5%)
  • 3 dashes prepared kombu saline solution
  • unflavoured Maison Perrier
  • 1 piece plum leather to garnish (optional)

Instructions
 

  • In cocktail shaker filled with ice, combine umeshu, Smoked Plum & Hawthorne Tequila, rich simple syrup, juice and kombu saline solution. Shake. Strain mixture into Collins glass filled with ice and Maison Perrier. Gently stir. To serve, garnish with plum leather (if using.)
