Cantaloupe, Feta and Fig Salad

Sweet meets salty in this easy, refreshing fruit salad.

Cantaloupe is juicy and refreshing, and works perfectly in salads,” they write in their book Peináo: A Greek Feast for All. “This sweet and salty match is inspired by the classic watermelon and feta salad, but with our own little spin that uses cantaloupe and figs.”

Cantaloupe, Feta and Fig Salad

A refreshing summer salad with cantaloupe, figs, feta cheese and a simple vinaigrette.

Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 2 tbsp oregano leaves finely chopped
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp salt flakes
  • 1 small cantaloupe peeled and cut into thin wedges
  • 4 figs halved or quartered
  • oz (150 g) Greek feta finely sliced

Instructions
 

  • In a small bowl, whisk together the olive oil, oregano leaves, lemon juice and salt flakes.
  • Arrange the cantaloupe wedges and figs on a serving platter and top with the feta. Drizzle with the dressing and serve.
