- 2 cups strawberries sliced (approx)
- 2-3 tbsp water
- 2 tsp lemon juice
- 1 vanilla pod halved, lengthwise and scraped
- 1 ¼ cups jam sugar

- In saucepan over medium to medium-high heat, combine strawberries, water, lemon juice and vanilla pod and seeds; reduce heat to medium-low and simmer for 10 minutes, stirring a few times.
