Grilled T-Bone Steak with Chili Spice Rub

Freshly-ground coffee is the secret ingredient to this excellent spice rub.

Marinating steak with dry spice rub is a cinch – just prepare your spice rub, rub all over the steaks and let marinate for 15 minutes.

The best steak spice rub to bring out the flavour has a surprising ingredient – ground coffee. The coffee, combined with garlic, salt and hot pepper flakes, adds richness. While the steak is cooking, grill smashed potatoes. While T-Bone steak is recommended in this recipe, this coffee chili spice rub works for any kind of steak. When you’re ready to serve, make sure there’s some Garlic Herb Butter on the side.

Grilled Steak with Chili Spice Rub

Ground coffee is the surprising ingredient in this amazing dry rub for steak. The richness of the coffee adds an intense mellow flavour to the grilled steak.

Ingredients
  

  • 1 tbsp ground coffee
  • 1 tbsp hot pepper flakes
  • 2 tsp coarse sea salt
  • 2 tsp cane sugar or granulated sugar
  • tsp granulated garlic
  • 3 T-bone steaks at room temperature, pat dry
  • 2 tbsp sunflower oil
  • salt and freshly ground pepper

Instructions
 

  • Heat barbecue to medium-high.
  • Using a mortar and pestle, combine coffee, hot pepper flakes, salt, sugar and garlic; grind until fine. Rub all over steaks and let marinate for 15 minutes.
  • Brush steaks with some of the sunflower oil; place on greased grill. Cook, covered flipping once, until desired doneness, 5 to 6 minutes per side for medium-rare. Transfer to cutting board; cover with foil and let stand for 10 minutes before serving.
