Pear Spritz Mocktail

This vibrant mocktail features a rosemary infusion and the sweet taste of pears.

Refreshing and elegant, this vibrant pear mocktail spritz can be enjoyed by every family member. It’s the perfect drink option for your holiday entertaining this year. The aromatic Bartlett pear is the best choice for this rosemary-infused spritz, but feel free to substitute with any variety of pear that’s available.

Freeze your extra Pear Rosemary Syrup in ice cube trays; one frozen cube has enough syrup for one cocktail. Thaw ahead of serving, or add to spritz as is. This drink is also visually stunning. By keeping the peel on the pear, it creates a stylish stained glass effect. To create an alcoholic version of this pear mocktail, simply add a splash of white wine or rum, or some fizzy Prosecco.

What is a spritz?

A spritz is an Italian cocktail made with wine, sparkling water and a bitter spirit over ice. It is bubbly, refreshing and typically served as an aperitivo (a pre-dinner drink). Possibly the most popular variation is the Aperol Spritz, which would look perfect when served in these crystal glasses. Pear Spritz Mocktail

Ingredients

Pear Rosemary Syrup

  • ¾ cup granulated sugar
  • ¾ cup water
  • 1 Bartlett pear chopped (or pear of choice)
  • 1 sprig rosemary

Mocktail

  • thinly sliced pears
  • ice
  • oz Pear Rosemary Syrup
  • cup club soda approx
  • 1 sprig rosemary

Instructions
 

Pear Rosemary Syrup

  • In saucepan, bring sugar, water, pear and rosemary to a boil over medium heat, and continue boiling until sugar is dissolved. Reduce heat and simmer until pears are very tender and falling apart, 15 to 18 minutes.
  • Using an immersion blender or blender, whirl until smooth. Strain through a fine-mesh sieve into a bowl. Let cool. The Pear Rosemary Syrup makes ¾ cup. Store in the refrigerator for up to 1 week.

Mocktail

  • Arrange sliced pears inside a tall glass or wine glass; fill with ice. Top with pear syrup, club soda and rosemary; gently stir to combine.
