Dark and Stormy with Mango and Tamarind

Chef Devan Rajkumar adds mango and tamarind to the classic rum-and-ginger-beer cocktail.

Mango and tamarind make a popular pairing, and Canadian chef and TV personality Devan Rajkumar has introduced the combo to a classic cocktail. “A Dark ’n’ Stormy is a delicious cocktail made with ginger beer and dark rum (essentially, it’s a Moscow Mule with rum instead of vodka),” he explains. “Skip the rum for an equally quenching mocktail.”

What is a Dark and Stormy?

A classic Dark and Stormy is a Caribbean cocktail made with dark rum, ginger beer and lime. Rajkumar’s version adds mango pulp and tamarind purée for a sweet-tart flavour that complements the ginger beer’s spicy kick..

How to Make a Non-Alcoholic Dark and Stormy


Simply leave out the dark rum. The mango, tamarind, lime and ginger beer still give the mocktail plenty of sweet, tart and spicy flavour.

Dark and Stormy With Mango and Tamarind

Devan Rajkumar
A tropical twist on the classic Dark ’n’ Stormy made with dark rum, ginger beer, mango and tamarind.

Ingredients

  • ½ oz simple syrup see note
  • 1 tsp tamarind purée
  • 1 oz mango pulp
  • 1 oz fresh lime juice
  • 2 oz dark rum optional
  • 4 oz ginger beer
  • lime wedge for garnish

Instructions
 

  • In a tall glass, combine simple syrup, tamarind purée, mango pulp and lime juice and stir well. Add ice, rum (if using) and ginger beer. Garnish with a lime wedge and serve.

Notes

To make simple syrup, combine sugar and ¾ cup water in a small saucepan over medium heat. Heat for 1 to 2 minutes, until sugar has completely dissolved. Pour into a container and set aside to cool.
